I was going to mix up my usual Spinach Breakfast Smoothie, but I figured with cold season here, we all needed an immune boost! Not only does this smoothie have a wonderful purple color, it has great immune boosting properties!

Elderberries have great immune boosting properties and paired with spinach and a protein shake, this smoothie will make the perfect breakfast to get you going and keep you going all morning!
I used berries that I had in the freezer from last years harvest. If you will be using fresh or frozen berries, be sure to cook them for a few minutes before putting them into your smoothie, as they are toxic when consumed raw. See HERE for a study done on elderberries. It's pretty amazing and very informative!
In blender put:
a handful of spinach, approx 2 cups
1/2 cup elderberries, cook for a few minutes first
1 banana
1 1/2 cup water
1/2 cup ice
optional: 1 12 oz protein shake
- do not use water if using protein shake
Blend until smooth. the elderberries have seeds in them, so blend a bit longer than usual.
Just look at that color!
When this years' harvest time comes around, I will share how to make elderberry syrup to use throughout the winter cold season!
